The issue you are experiencing is a result of leaf springs that are too long for your hanger spacing. You will want shorter springs and I recommend also going with a capacity more geared toward your axles. You will want to use the Triple-Axle Trailer Hanger Kit for Double-Eye Springs # APTT5 and # APTT3 for reference. These kits are rated for 2,000 to 7,000 lb axles with almost identical spacing.

I had someone pull the Softride Hang2 2-Bike Rack for 1-1/4" and 2" Hitches # SR27041 from our warehouse to get some measurements for you. When this bike rack is in the tilted back position, the upright arm measures about 26" from the hitch pin hole on the receiver. You can measure 26" back from your receiver's pin hole to verify if your doors extend out that for. Seems like you're needing some suspension enhancement! I recommend using the RoadActive kit # RAS3614-T. This will help your suspension from 0 to 100% travel. It's also adjustable to get the right amount of support. I do have an option for you but we do not carry a trunk mount bike rack at this time for the 2017 Nissan NV 2500.
I think you will be much happier with a hitch mounted bike rack option on the Nissan NV because they are much more convenient compared to a trunk mount rack that you have to take on and off the vehicle all of the time.
